Help me with this!!!

It's kind of silly what i am about to ask, but can anyone show me how to change the default alphabet pane content (the box where the a-z, A-Z, 0-9 and symbols are displayed) to a custom list. I am trying to build a japanese-like alphabet, and i cannot keep track of the symbols assigned to the letters. E.g. i draw the symbol for KO or KI sound, but cannot change it in the alphabet pane. Oh! I tried to change this thing, but everytime i load my *.fon file, keeps reverting back to the latin set. I've changed from preferences menu the mode of my project to Big5 for chinese mode, but i don't think this will do it. Any ideas?
